Het aantal vegetariërs neemt de afgelopen jaren steeds meer toe; niet alleen in Nederland, maar wereldwijd. Of mensen nu één, of meerdere dagen in de week bewust vleesloos eten (de zogenaamde flexitariërs), of nooit vlees of vis tot zich nemen; de trend van de vleesloosheid is stijgende.
Veel mensen eten vegetarisch om ethische, of religieuze redenen. Anderen denken meer aan het milieu: de intensieve veehouderij zorgt onder andere voor een groot deel voor de methaan uitstoot en bodemvervuiling van de planeet, buiten het feit dat het ook nog eens veel water verbruikt. Maar het grootste deel van de vegetariërs, en zo ook de meeste vleesminderaars, doen het om gezondheidsredenen.
De meningen over totale plantaardige voeding (veganisme) zijn verdeeld. Toch is wel bewezen dat minderen met vlees het risico op tal van ziekten kan verminderen. Een aantal studies hebben aangetoond dat vegetariërs doorgaans minder overgewicht hebben dan fulltime vleeseters. Dit komt hoogstwaarschijnlijk omdat de meeste vleessoorten veel (verzadigd) vet bevatten. Om deze reden hebben vegetariërs ook vaker een gezonder cholesterol. Daarnaast zijn er aanwijzingen dat een vegetarisch dieet de kans op hart- en vaatziekten, diabetes en zelfs kanker kan verkleinen.
Er wordt vaak geroepen dat vegetariërs allemaal grote tekorten hebben aan bijvoorbeeld vitamine B12 en ijzer. Toch hoeft dit niet zo te zijn, als je gebruik maakt van een gebalanceerd dieet. B12 wordt ook gevonden in zuivel en eieren. IJzer vinden we weer terug in peulvruchten en groene bladgroenten. Daarnaast zijn er ook zuivel- en vleesvervangers die verrijkt zijn met deze belangrijke stoffen. Zo is het nog makkelijker om met een gerust (en gezond!) hart van een vleesloze dag te genieten.
